I thought the perfect drink to accompany this salad was sparkling water mixed with Acai and Cranberry Juice. Delicious!

Time to dine by the pool....Happy Eating. 



Strawberry Shrimp Salad with Strawberry Vanilla Vinaigrette

This salad is healthy, delicious and quick! Strawberries add a nice sweet and tart dimension to salads.
This salad is colorful and full of lots of healthy veggies. Sweet, Savory and Delicious. A salad that is good to you and good for you! The Strawberry Vanilla Vinaigrette adds another layer of flavor to the salad.  Whenever I get the opportunity, I love to make my own salad dressings. They are surprisingly
easy to make and keep in the refrigerator for weeks. Homemade salad dressing, Trumps 
anything you can buy from a bottle. 

Salad:
Approximately 5 oz mixed baby greens washed and dry (spring mix)
Approximately 5 oz romaine lettuce
5 oz. Feta Cheese
1 Pint Strawberries washed and sliced
Candied Walnuts (the Trader Joes brand is awesome)
Cooked Shrimp

Combine salad greens Feta Cheese and Strawberries.  Sprinkle with
camdied walnuts and place cooked shrimp on top of salad greens.

Strawberry Vanilla Vinaigrette
1 cup olive oil 
2 tablespoons white wine vinegar
1/2 pint fresh strawberries halved
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon dried Tarragon
1 teaspoon Vanilla
1 Tablespoon sugar

In a blender or food processor, mix olive oil, strawberries, white wine vinegar, salt, pepper, Tarragon and sugar. Blend until smooth.  Toss Salad greens with vinaigrette.

Orange Crush

Orange is a bold and fiery color.  People either love it or hate it. I belong to the LOVE IT! camp.

I went a little matchy matchy with this ensemble, but the blue leggings provide a nice color contrast.



Vegetarian Tortilla Soup

There is something so warm and comforting about a bowl of tortilla soup. Its the perfect
dish to make you feel warm and tingly inside when its cold outside.
Ingredients:
2 Tablespoons vegetable oil
1 package frozen pepper and onions
2 cloves minced garlic
3 tablespoons ground cumin
1 28oz can crushed tomatoes
3 (4 ounce cans) vegetable broth
salt and pepper to taste
1 can whole kernel corn
12 ounces tortilla chips
1 cup shredded cheddar cheese
1 avocado peeled pitted and diced

Directions:
Heat the oil in a pan over medium heat. Stir in the pepper, onion, garlic and cumin and
cook for 5 minutes until vegetables are tender.Mix in the tomatoes and chili peppers. 
Pour in the broth and season with salt and pepper. Bring to a boil, reduce heat to low and 
simmer for 30 minutes.

Mix corn into the soup and continue cooking 5 minutes. Serve in bowls over
equal amounts of tortilla chips. Top with cheese and avocado.

Enjoy with a refreshing beverage. I suggest Orange Crush!  What are you waiting for? Go make some 
soup! I promise this is worth the effort...

A Sweet n Sassy Valentines Celebration

 This Valentines Day, Celebrate You! This is exactly the thought I had in mind when I created a fun and sassy Valentines Day theme and hosted an intimate party for a few friends. Enjoy!

This zebra jewelry box is straight from my closet. I thought it made an interesting presentation for serving my homemade strawberry truffles



I used double shot glasses to serve white chocolate strawberry mousse. The shot glasses work great for serving all types of desserts.







Ooh La La, is my nod to the Late Teena Marie. This was one of her biggest hits.





This is a phrase from the Beyonce song "Single Ladies"

These beautiful jello shots are not from a box. I could not find a pink jello so I had to make my own.   The beautiful pink color was achieved by making homemade jello shots with an early frost Moscato D Asti, Guava Juice and sugar.
