Serene Green


Happy Monday loves! Hope you had a great weekend. I have been extremely busy, but also having lots of fun. With spring and summer come lots of fun events and this time of year I tend to get very involved in planning spring teas and attending women's high tea events.  I had a great time last year with my Audrey Hepburn Breakfast at Tiffany's inspired High Tea. You can see photos from last year, by clicking here.   I have a few coming up that I am really  looking forward to and I will be sure to post lots of photos:-) In addition to being a sports mom and my work projects, I am very busy in women's ministry as well. There are not enough hours in the day, but doing things that bless other people is priceless.

I am loving the beautiful sunny days and looking forward to wearing my bright spring and summer colors. The outfit I am wearing is a very simple denim and classic white shirt with a bright kelly green colored bag and nude heels. Classic and chic with the shoes and bag as the punctuation marks in my outfit.

Would you believe these shoes are actually comfy? I am big on shoes that don't hurt my feet. These are another shoe in my collection that are ok to wear for extended time without aching feet.

Tuna Croquettes

As much of a foodie as I am, I have to balance indulgent eating with healthy choices. Growing up I had my share of salmon croquettes with grits and biscuits. I still love all kinds of croquettes, but I have discovered a healthier way of cooking them.

I decided to try a paleo inspired recipe using tuna instead of salmon and the result is pretty delicious and very healthy and great if you are watching your carbs. These tuna croquettes can be pan fried or baked in a hot oven until crispy. There are no bread crumbs in this recipe, so they are completely low carb and gluten free, but full of great flavor. These also freeze well and make a quick meal if you add vegetable. I often pack them as snacks, but they make a great dinner with paired with a big green salad.
 



Start with canned tuna.You can also used canned salmon if you don't have tuna
a hint of lemon and a blend of spices adds perfect flavor





Ingredients

3 small cans of tuna (5 oz)
2 eggs
2 tablespoons fresh lemon juice
1/2 cup chopped onion
1/3 cup chopped green onion
1 teaspoon dried parsley
2 teaspoons Dijon mustard
2 teaspoons garlic powder
1/2 teaspoon cayenne pepper
salt and pepper to taste
Olive Oil or your favorite cooking oil 

Directions:

Mix tuna, eggs and fresh lemon juice until well combined. Add the onion, parsley mustard and spices.When mixture is well mixed. Shape into patties. (this will make approximately 10)

Heat oil until hot and pan fry for 2-3 minutes on each side. If you prefer to bake the croquettes, oil a baking sheet and preheat oven to 425. Bake for approximately 10 minutes or until crispy and golden brown.

Tangerine Splash

Hey Loves! Life is hectic. Projects, events and a bit of travel, but I'm not complaining. I have been promising new recipes and I have gotten some emails requesting more restaurant reviews and recipes, so I know its long overdue. I have been dining in some great places with friends and have some great reviews to share when I have a moment to post them. Thank you for your kind emails and for understanding why I haven't been posting as much. Life gets in the way sometimes.

I am wearing one of my favorite combinations. Orange and Neutrals with a hint of animal print from my scarf. The sweater I have on is thin enough to wear in spring and summer on cooler days. I love so many of the clothes at Zara.

One of my friends gave me a gift card the other day and it wasn't my birthday or a holiday, it is such a blessing when a person does something thoughtful just because. Guess what other great thing happened...I pulled out a purse last week that I hadn't worn since last year and it had some money in it. Don't you love when that happens? LOL

Did I mention that I really really really love coffee?

These pumps are so comfortable and I am all about a comfortable shoe. I try not to wear shoes that hurt my feet and a nude pump is so versatile.

Stripes on Stripes

Happy Wednesday loves! Hope your week is going well. Had a great weekend and the best part of it was my son's early birthday celebration with his friends. One of the fun parts about motherhood is planning birthday celebrations for your kids and since I only have one child sometimes I go overboard, but this year was more low key. On his actual birthday this past Monday, we started off by going to breakfast and then having another celebration with just him and I. He loves to have a celebration with his friends and then a time to have me all to himself.

I had more birthday cake than I care to admit, LOL. The outfit I am wearing is a subtle pattern mix with stripes on stripes in classic black and white. The patterns I tend to wear the most are animal print, stripes and polka dots and sometimes I wear all three in one outfit.

I definitely believe that true style is not defined by a name brand or how much something cost. I pair moderately priced pieces with high end pieces for a nice balance and I tend to favor classic pieces that never go out of style. A lot of my wardrobe consists of clothes I have had for years, but because the pieces are not trendy, you cannot tell that I have had them forever. I usually add the fun element into my looks with accessories, but keep the clothing simple and classic. I play with trends every once in a while.
