Awwesome Blogger Award!



Happy Sunday! I recently received a blogger award and did not have a chance to do a post about it until today. I would like to thank Just Daisy for presenting me with this awesome award!  It is such an honor and it is always such fun to tag other bloggers with the award:-) The rules of this award are to present seven random facts about yourself and then pass the award on to seven other bloggers.

1. I have become quite obsessed with photography and carry my camera every where I go
2. I get annoyed at drivers who tailgate and swerve in and out of traffic (I hope y'all don't do that)

7. I once convinced a chef at a resort in Jamaica to teach me how to make authentic Jerk Chicken. He actually let me come into the resort kitchen and taught me:-)

Zesty Turkey Meatball Sliders



There is something comforting about a warm, zesty, saucy, cheesy meatball sandwich.  Do not go lightly into this good sandwich because there is no way to eat this and be cute. Eat this BOLDLY!  Expect sauce to drip onto your fingers and you might even get some on your face to match:-) But of course, the mozzarella oozing down the sides will make you want to shove the whole thing in your mouth.  If you are in public, don't do that.

These tiny sandwiches pack a flavorful punch.  Sliders are so perfect for having a small taste of something filling and delicious with half the guilt. And of course if you serve these at your next gathering, I guarantee they will disappear with a quickness. I use a combination of ground turkey and turkey Italian sausage for a healthy twist, but this works beautifully with ground beef too. I think you need these sliders in your life.

I'm Serious. They are that good

    Ingredients

    Miniature french rolls or Hawaiian Rolls 
    Meatballs
    Marinara Sauce
    Mozzarella Cheese


Meatballs



1 pound ground turkey

1/2 pound turkey Italian sausage

1/4 cup Panko crumbs

2 large eggs, lightly beaten

1 tablespoon minced garlic

1/2 cup grated Parmesan

1/4 cup finely chopped Italian flat-leaf parsley

1/2 teaspoon Kosher salt

1/2 teaspoon freshly ground black pepper

¼ cup oil for frying the meatballs (I use canola)

Mozzarella Cheese for topping meatballs


Combine the ground turkey, Italian sausage, panko, eggs, garlic, Parmesan, parsley, salt and pepper.  Roll the mixture into 2-inch balls. Place them on a baking sheet or platter, and set aside.

 Heat half the olive oil in a large, heavy skillet over medium heat. Add half the meatballs, and brown them on all sides.  Put Meatballs aside and prepare sauce
 

Marinara Sauce

2 tablespoons olive oil

1 large yellow onion chopped

4 cloves garlic minced

1 28 oz can tomato puree

1 28 oz can tomato sauce

2 teaspoons dried parsley

1 teaspoon dried basil

½ teaspoon oregano

2 teaspoons salt

2 tablespoons water



Heat olive oil in large pot over medium heat. Add the onion to the pot and sauté for 5 minutes or until tender.  Add garlic and sauté for approximately 1 minute.  Add the tomato puree and tomato sauce, parsley, oregano, salt and sugar.  Add water if you need to thin out the sauce. Bring to a boil and reduce heat to a low simmer.  Let sauce simmer for two hours.

After sauce has simmered for two hours, add meatballs to sauce and simmer for 30 minutes.  

Time Saving Tip

You can also use your favorite prepackaged marinara sauce to save time.  For ready made sauce,  heat the sauce until it boils and then reduce heat to a  simmer and add meatballs and simmer for 30 minutes stirring occasionally.

To assemble the sliders

Split rolls horizontally. Place rolls on baking sheet with the inside of the rolls facing up. Broil for a minute or two.  Take spoon and press lightly into the bottom roll and then spoon meatball and sauce onto bottom roll and top with a slice of mozzarella. Put back in oven and broil just until cheese is melted. Place the tops of the rolls on each slider.

Coral


Happy Monday! How was your weekend? Mine was busy busy busy.  I did some fun stuff with my son, took him to an event, and attended a couple of other events.  Wooh! Exhausting, but fun. After all the fun, I took some time to try the daunting task of organizing my clothes and shoes. You never realize how much stuff you have until you try to organize it. And of course you start pondering whether to give stuff away or keep it. So how was your weekend?

Today I am wearing coral which is a color I absolutely love.  I don't particularly find this dress figure flattering, but I love the color. And of course a cute comfy pair of oxfords is a great change of pace from heels.

Cloudy Monday



Hi Lovelies! Happy Monday:-) Today is one of those cloudy  unpredictable days, but Daisy over at Just Daisy awarded me the awesome blogger award and it surely put a smile on my face:-) I will do a post on that later this week. Be sure to check out her blog here Thanks Daisy, you are such a sweetheart:-)  I had a good weekend and I hope you did too.  We had some amazing weather last week and now there are dark cumulus clouds and the threat of rain.  I am still expecting this to be a great week and tomorrow evening I will announce the details of my one year blog anniversary giveaway.

Caramel Praline Cheesecake



There are desserts. And there are DESSERTS!  This praline cheesecake will make chocolate lovers cheat with caramel.  Sweet,  gooey, smooth and creamy.  This is one of those desserts you have to eat out loud.   It is so good that you will ooh and aah and lick your fork and if you are like me, you will shamelessly lick the plate when you are done. 

 I love to serve this cheesecake with a side of roasted pecans with sea salt. It is an amazing accompaniment and will tickle your taste buds.  The cheesecake is amazing on its own, but I love to make homemade whipped cream to really put this over the top.  And in case you need more convincing I will let the photos speak for themselves. Try not to lick the computer screen. Okay?


Imagine sticking your fork in this amazing cheesecake and watching a sea of caramel ooze out.  As if that wasn't enough,  the cheesecake is nestled next to a puddle of caramel.

Put it all together and you have sheer deliciousness. Ready to make this? I promise this will take you to a level of decadence you wont want to come back from:-)

Ingredients


2 cups graham cracker crumbs

1/2 cup melted butter

1 tablespoon white sugar and 1 tablespoon brown sugar

3 (8 ounce) packages cream cheese, softened

1 cup white sugar

3 eggs

1 (8 ounce) container sour cream


2 teaspoons vanilla extract

Whipped cream

Smuckers caramel ice cream topping


Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly coat a 9-inch springform pan with nonstick cooking spray.
  2. Mix together the graham cracker crumbs, melted butter, and 2 tablespoons of sugar until well combined. Press into the bottom of the prepared springform pan, and 1 inch up the sides. Bake in preheated oven for 8 minutes, then remove to cool on a wire rack.
  3. Reduce oven temperature to 325 degrees F (165 degrees C).
  4. Beat the softened cream cheese in a large bowl with an electric mixer until fluffy. Gradually add 1 cup of sugar, beating until blended. Add eggs one at a time, beating well after each addition. Stir in sour cream, espresso and vanilla. Pour batter into the baked and cooled crust.
  5. Pour approximately 1 cup to 1 cup and a half of cheesecake batter. Enough to cover the crust.  Bake this layer for about ten minutes, when the batter is slightly set. Pour a half cup of caramel over the batter.  Pour the remaining cheesecake batter on top of the caramel
  6. Bake cheesecake in the preheated oven for 1 hour and 5 minutes; then turn the oven off, partially open the door and allow the cheesecake to rest for 15 minutes more. Remove from the oven, and run a knife around the edges. Cool cheesecake on a wire rack to room temperature, then cover the springform pan with plastic wrap, and chill in the refrigerator for 8 hours.
Drizzle caramel over the top of cheesecake and sprinkle with praline crumble.

To Make Praline crumble: 

Put a half cup of pecans in food chopper and pulse until finely chopped.  Put into small bowl and mix in 1 tablespoon of brown sugar. Bake in oven 5-7 minutes until golden brown.  

Homemade Whipped Cream

  • 1 cup heavy cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla

Whip cream until almost stiff. Add sugar and vanilla; beat until cream holds peaks.
